Pineapple Cowboy Candy

Ingredients

  • 1 large ripe pineapple, peeled and cubed
  • 2 cups sugar
  • 1 cup apple cider vinegar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 jar of sterilized mason jars for storage

Instructions

  1. In a medium pot, mix sugar, apple cider vinegar, cinnamon, allspice, and cayenne pepper. Heat over medium, stirring until sugar is dissolved.
  2. Add cubed pineapple to the pot and reduce heat. Let it simmer for 10 minutes so the flavors infuse.
  3. Take the pot off the heat and cool slightly. Carefully pour the pineapple and syrup into sterilized jars, leaving space at the top.
  4. Seal jars tightly, cool to room temperature, and refrigerate for at least 24 hours before serving.

Notes

For extra flair, try adding shredded coconut before sealing the jars. Nutmeg or ginger are great spice swaps or additions. Stored in the fridge, this candy keeps for up to 2 months.
