- 2 cups water
- 1 cup apple cider vinegar

- 1 tablespoon salt
- 5 to 6 whole cloves
- 1 teaspoon whole black peppercorns
- 1 teaspoon coriander seeds (optional, for added flavor)
Instructions
- Scrub beets clean and trim the tops, leaving about an inch of stem to prevent bleeding.
- Place beets in a pot, cover with water, and bring to a boil. Reduce heat and simmer until fork-tender, about 30–45 minutes.
- Let beets cool slightly, then peel and slice or chop as you prefer.
- In a saucepan, combine water, vinegar, sugar, salt, and spices. Stir over medium heat until the sugar dissolves.
- Add sliced beets to the saucepan and let them soak in the warm brine for at least 30 minutes. For best results, chill in the fridge for a few hours or overnight before serving.
Notes
