Description

Ingredients

  • 6 oz (168g) bittersweet chocolate (high-quality recommended)
  • 1/2 cup (113g) unsalted butter
  • 2 large eggs
  • 2 egg yolks
  • 1/4 cup (50g) granulated sugar
  • 1/8 teaspoon salt
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Generously butter and lightly flour 4 to 5 ramekins.
  3. In a double boiler, melt chocolate and butter together, stirring until smooth. Let cool slightly.
  4. In a separate bowl, whisk eggs, yolks, sugar, and salt until thick and pale.
  5. Slowly mix in the chocolate mixture, stirring constantly.
  6. Sift in the flour and gently fold until just combined.
  7. Pour batter evenly into ramekins.
  8. Bake for 6 to 8 minutes, until the edges are set and centers are still soft.
  9. Cool for 1 minute, then invert onto dessert plates.
  10. Garnish with powdered sugar, berries, or a scoop of vanilla ice cream.

Notes

Make the batter ahead of time and refrigerate up to 2 days. Let come to room temperature before baking. Don’t overbake or you’ll lose that signature molten center.
