Ingredients

  • ¾ teaspoon baking powder
  • ½ cup (113g) unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 cup (250g) processed peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional: M&Ms, chocolate chunks, or chopped nuts for added texture

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour and baking powder.
  3. In another bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add peanut butter and mix until incorporated.
  4. Add the egg and vanilla extract. Mix until smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Scoop about 2 tablespoons of dough, roll into balls, and place on a lined baking sheet.
  7. Flatten each ball with a fork to create a cross-hatch pattern.
  8. Bake for 10 minutes or until edges are golden. Cool on the sheet for a few minutes before transferring to a wire rack.

Notes

Use processed peanut butter for the best results. Avoid overbaking for softer cookies. Add chocolate or nuts for a twist!
