Peanut Butter Baked Donuts

  • Author: Navy Sinclair

Description

There’s something magical about a warm, soft donut, especially when it’s infused with creamy peanut butter. These baked peanut butter donuts are a lighter, healthier alternative to traditional fried ones, yet they deliver all the flavor and comfort you crave. They’re quick to prepare and perfect for breakfast, snack time, or dessert. Once you bake a batch, don’t be surprised if they disappear in minutes.

Ingredients

Scale
  • 1 cup all-purpose flour (or use whole wheat flour for a healthier option)
  • 1/2 cup creamy peanut butter (chunky is fine if you like texture)
  • 1/3 cup granulated sugar (swap with coconut sugar if preferred)
  • 1/2 cup buttermilk (or regular milk mixed with a spoonful of vinegar)
  • 1 large egg (use a flax egg for a vegan version)
  • 1 tsp baking powder (make sure it’s fresh)
  • 1/2 tsp baking soda (helps with the fluffy texture)
  • 1/2 tsp salt (to enhance the sweetness)
  • 1 tsp vanilla extract (adds depth of flavor)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a donut pan with non-stick spray.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, blend the peanut butter, sugar, buttermilk, egg, and vanilla until smooth and creamy.
  4. Pour the wet mixture into the dry ingredients and stir just until combined, don’t overmix.
  5. Spoon the batter into the donut pan, filling each section about two-thirds full.
  6. Bake for 12 to 15 minutes, or until a toothpick comes out clean. Cool slightly, then transfer to a wire rack.

Notes

Want to elevate these donuts? Stir in some chocolate chips or chopped nuts for added crunch. You can also substitute peanut butter with almond or sunflower seed butter for a fun twist. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze them for later enjoyment.
