  • 1/2 cup chopped fresh mint leaves
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Wash and slice the peaches, then cube the watermelon. Choose fruit that’s ripe but not overly soft.
  2. Place the watermelon and peach slices into a large bowl, mixing gently to maintain the shape of the fruit.
  3. Top with crumbled feta or goat cheese for a creamy, salty contrast to the fruit.
