Description
Creamy, fruity, and oh-so-satisfying, this Peach Chia Pudding brings together the sweet essence of ripe peaches and the nutrient-packed magic of chia seeds. Ideal for breakfast, a snack, or even dessert, it’s a healthy treat that doesn’t skimp on flavor.
Ingredients
Scale
- 2 ripe peaches – peeled, pitted, and chopped
- 1 cup almond milk (or any preferred milk)
- 1/4 cup chia seeds
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Mix chopped peaches with honey or maple syrup, vanilla extract, and a pinch of salt. Let them sit for 10 minutes.
- In a separate bowl, whisk together almond milk and chia seeds. Let rest for 5 minutes, then whisk again to avoid clumps.
- Fold in the peach mixture until well combined. Taste and adjust sweetness if needed.
- Cover and refrigerate for at least 2 hours, or overnight, to allow it to thicken.
- Stir well before serving. Serve in bowls or jars, topped with more peaches, nuts, or a spoonful of yogurt.
Notes
Blend the almond milk with the chia seeds for a smoother texture. Store leftovers in an airtight container in the fridge for up to 5 days. Try switching the peaches with strawberries or bananas for a different fruity twist.
