Description

Sweet summer peaches paired with creamy burrata come together in this light and refreshing salad that’s perfect for warm days and gatherings.


Ingredients

  • 4 ripe peaches, sliced (nectarines can be used instead)
  • 8 ounces fresh burrata cheese (or mozzarella for a firmer bite)
  • 5 cups arugula (baby spinach or mixed greens work too)
  • 1/3 cup balsamic glaze (store-bought or homemade)
  • 1/4 cup extra virgin olive oil (infused oils can add extra flavor)
  • Salt and freshly ground black pepper, to taste
  • Optional: fresh basil leaves for garnish (or use mint as a swap)

Instructions

  1. Wash and slice the peaches into wedges. No need to peel if they’re ripe.
  2. Toss arugula with olive oil, salt, and pepper until lightly coated.
  3. Spread the arugula onto a serving plate or individual dishes.
  4. Add the peach slices and gently tear open the burrata over the greens.
  5. Drizzle balsamic glaze evenly over the salad and top with basil leaves if using.
  6. Serve immediately to enjoy the salad at its freshest.

Notes

To elevate the texture, try adding toasted nuts like walnuts or pecans. Heirloom tomatoes make a great addition early in the season. Assemble just before serving to keep the greens crisp.
