- 4 ripe peaches, sliced (nectarines can be used instead)
- 8 ounces fresh burrata cheese (or mozzarella for a firmer bite)
- 5 cups arugula (baby spinach or mixed greens work too)
- 1/3 cup balsamic glaze (store-bought or homemade)
- 1/4 cup extra virgin olive oil (infused oils can add extra flavor)
- Salt and freshly ground black pepper, to taste
- Optional: fresh basil leaves for garnish (or use mint as a swap)
Instructions
- Wash and slice the peaches into wedges. No need to peel if they’re ripe.
- Toss arugula with olive oil, salt, and pepper until lightly coated.
- Spread the arugula onto a serving plate or individual dishes.
- Add the peach slices and gently tear open the burrata over the greens.
- Drizzle balsamic glaze evenly over the salad and top with basil leaves if using.
- Serve immediately to enjoy the salad at its freshest.
Notes
To elevate the texture, try adding toasted nuts like walnuts or pecans. Heirloom tomatoes make a great addition early in the season. Assemble just before serving to keep the greens crisp.
