These Peach Bellini Cupcakes are like sunshine in dessert form – soft vanilla cupcakes laced with peach puree and a splash of prosecco, topped with a dreamy peach frosting.

- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup peach puree (fresh or canned)
- 1/4 cup prosecco or sparkling wine (or non-alcoholic sparkling juice)
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- For frosting: 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup peach puree
- 1–2 tablespoons prosecco
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- Cream the butter and sugar in a large bowl until light and fluffy, about 3 minutes.
- Add eggs one at a time, mixing well. Then add peach puree and vanilla extract, blending until smooth.
- Slowly add the dry mixture in batches, alternating with prosecco. Mix until just combined.
- Divide the batter evenly into the cupcake liners, filling each about two-thirds full.
- Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cupcakes cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
- To make the frosting, beat softened butter and powdered sugar until crumbly.
- Add peach puree and prosecco gradually, beating until the frosting is smooth and fluffy.
- Frost the cooled cupcakes generously and top with peach slices if desired.
Notes
Avoid overmixing the batter to keep cupcakes light. You can substitute applesauce for half the butter if you want a lighter version.
