Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic – minced or crushed
  • 1 tablespoon fresh rosemary – chopped; parsley works too
  • 1 tablespoon thyme – chopped; dried thyme also works
  • Salt and pepper – to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the steak dry using paper towels to help achieve a flavorful sear.
  3. Mix olive oil, garlic, rosemary, thyme, salt, and pepper in a bowl. Rub the mixture generously over the steak.
  4. Place the steak on a roasting pan, ensuring there’s space around it for heat to circulate.
  5. Bake for 20–25 minutes depending on desired doneness. For medium-rare, target an internal temp of 130°F (54°C).
  6. Let the steak rest for 5–10 minutes before slicing so juices can redistribute for extra tenderness.
