- 2 cups basmati rice (or any long-grain rice)
- 1 lb lamb or beef, cut into bite-sized pieces
- 1 large onion, finely chopped
- 2 carrots, diced
- 4 cloves garlic, minced
- 4 cups chicken or beef broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- 3 tablespoons cooking oil
Instructions
- Heat the oil in a large pot over medium-high heat. Add chopped onions and cook until translucent, about 5 minutes.
- Stir in the diced carrots and cook for another 2-3 minutes.
- Add the meat and brown it well on all sides to build flavor.
- Mix in garlic, cumin, coriander, salt, and pepper. Cook for 1 minute until the spices release their aroma.
- Pour in the broth, bring it to a boil, then lower to a simmer and cover the pot.
- After 10 minutes, add the rinsed rice on top of the meat mixture without stirring. Make a small well in the center of the rice.
- Cover and cook on low for 20-25 minutes until the rice is tender and the broth is absorbed.
- Fluff the rice gently and mix with meat and vegetables before serving.
Notes
For extra flavor, add chili flakes or a cinnamon stick with the spices. You can swap the meat with chickpeas or veggies for a vegetarian twist. Let the dish rest a few minutes before serving to blend the flavors beautifully.
