Description

These One Bowl Banana Muffins are quick, easy, and wonderfully moist. Perfect for using up ripe bananas, they’re ideal for breakfast, snacks, or anytime you crave something sweet.


Ingredients

  • 23 very ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (can reduce or use honey instead)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a bowl, mix mashed bananas with melted butter until smooth.
  3. Stir in baking soda and salt.
  4. Add sugar, beaten egg, and vanilla. Mix well.
  5. Add flour and stir just until combined, don’t overmix.
  6. Fill muffin cups about 2/3 full. Bake 18–20 minutes, or until a toothpick inserted comes out clean.
  7. Let muffins cool in the pan briefly, then transfer to a rack to cool completely.

Notes

For a twist, fold in chocolate chips or chopped nuts. Muffins freeze well, store in a zip-top bag once cooled. Don’t overmix for the best fluffy texture.
