These One Bowl Banana Muffins are quick, easy, and wonderfully moist. Perfect for using up ripe bananas, they’re ideal for breakfast, snacks, or anytime you crave something sweet.

- 2–3 very ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar (can reduce or use honey instead)
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
- In a bowl, mix mashed bananas with melted butter until smooth.
- Stir in baking soda and salt.
- Add sugar, beaten egg, and vanilla. Mix well.
- Add flour and stir just until combined, don’t overmix.
- Fill muffin cups about 2/3 full. Bake 18–20 minutes, or until a toothpick inserted comes out clean.
- Let muffins cool in the pan briefly, then transfer to a rack to cool completely.
Notes
For a twist, fold in chocolate chips or chopped nuts. Muffins freeze well, store in a zip-top bag once cooled. Don’t overmix for the best fluffy texture.
