- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- Cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in egg and vanilla until smooth.
- In another bowl, whisk oats, flour, baking soda, and salt. Gradually combine with the wet mixture.
- Fold in chocolate chips evenly.
- Scoop dough onto a parchment-lined baking sheet, leaving 2 inches between each.
- Bake 10-12 minutes until edges are golden and centers look slightly soft.
- Cool a few minutes on the sheet, then transfer to a wire rack to finish cooling.
Notes
Do not overbake; cookies continue to firm up as they cool. Add nuts or shredded coconut for extra flavor. These cookies freeze well for longer storage.
