Ingredients

  • 1/2 cup unsalted butter, softened (or coconut oil as a substitute)
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in egg and vanilla until smooth.
  4. In another bowl, whisk oats, flour, baking soda, and salt. Gradually combine with the wet mixture.
  5. Fold in chocolate chips evenly.
  6. Scoop dough onto a parchment-lined baking sheet, leaving 2 inches between each.
  7. Bake 10-12 minutes until edges are golden and centers look slightly soft.
  8. Cool a few minutes on the sheet, then transfer to a wire rack to finish cooling.

Notes

Do not overbake; cookies continue to firm up as they cool. Add nuts or shredded coconut for extra flavor. These cookies freeze well for longer storage.
