These Nutella macarons are delicate, rich, and irresistibly good. With smooth almond shells and a creamy Nutella center, they’re the perfect homemade indulgence for any sweet tooth.

- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 1/4 cup egg whites (from 2 large eggs)
- 1/4 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1/2 cup Nutella (for the filling)
- Food coloring (optional)
Instructions
- Preheat oven to 325°F (160°C) and line two baking trays with parchment paper.
- Sift almond flour and powdered sugar into a mixing bowl to ensure a fine texture.
- In a separate bowl, whisk egg whites until soft peaks form. Gradually add granulated sugar and cream of tartar, continuing to whisk until stiff peaks appear.
- Add food coloring if desired, folding gently into the meringue.
- Carefully fold the almond mixture into the meringue until the batter flows like lava with no dry streaks.
- Transfer batter into a piping bag fitted with a round tip and pipe 1-inch rounds onto the baking sheets.
- Tap the trays on the counter to remove air bubbles and let rest for 30-60 minutes until a skin forms on top.
- Bake for 15-18 minutes, rotating the pans halfway through. Shells should be firm but not brown.
- Let the macarons cool completely before removing from the parchment.
- Pipe Nutella onto half of the shells and sandwich them with the remaining halves.
Notes
Let the macarons rest before baking to achieve a smooth surface. Always check your oven’s temperature accuracy to prevent cracking. Store in an airtight container in the fridge and consume within a few days for best texture.
