These easy No-Bake Chocolate Coconut Cookies are the perfect treat when you’re craving something sweet but don’t want to turn on the oven. With the rich combo of cocoa, coconut, and nut butter, they’re incredibly satisfying and ready in no time.

- 1 cup rolled oats (quick oats work for a softer bite)
- 1/2 cup unsweetened cocoa powder
- 1/2 cup shredded coconut (sweetened or unsweetened)
- 1/2 cup nut butter (like almond, peanut, or sunflower seed butter)
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan over low heat, stir together nut butter, honey or maple syrup, coconut oil, and vanilla until melted and well-blended.
- Take the pan off the heat and whisk in cocoa powder until the mixture is smooth and chocolaty.
- In a large bowl, combine rolled oats and shredded coconut. Pour in the chocolate mixture and stir until evenly coated.
- Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto a lined baking sheet. Flatten gently with the back of a spoon.
- Place the baking sheet in the fridge for at least 30 minutes to let the cookies firm up. Enjoy once chilled!
Notes
Want to get creative? Stir in chopped nuts, mini chocolate chips, or dried fruit. For extra flavor, roll cookies in more shredded coconut before chilling. Keep them in an airtight container in the fridge for up to a week, or freeze for longer storage.
