- 1 cup warm water (110°F to 115°F)
- 1 packet active dry yeast (2 1/4 teaspoons)
- 1 tablespoon granulated sugar
- 2 1/2 cups all-purpose flour, plus more for dusting
- 1 teaspoon salt
- 8 ounces fresh mozzarella cheese, cut into small cubes
- 1/4 cup baking soda
- 1 large egg, beaten
- Coarse sea salt, for sprinkling
Instructions
- In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until frothy.
- Add flour and salt to the yeast mixture. Stir with a wooden spoon until dough forms.
- Knead the dough on a floured surface for 5–7 minutes until smooth and elastic. Let rest in a greased bowl, covered, for 1 hour or until doubled in size.
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Punch down dough and divide into 12 equal pieces. Flatten each piece, add a mozzarella cube in the center, then seal and roll into a ball.
- Boil 10 cups of water and add baking soda. Boil pretzel bites in batches for 30 seconds each, then transfer to the baking sheet.
- Brush bites with beaten egg and sprinkle with coarse salt. Bake for 12–15 minutes until golden brown.
Notes
Avoid over-boiling the pretzel bites to maintain a soft texture. Seal the dough well around the mozzarella to prevent leakage during baking. Add herbs or garlic powder to the dough for extra flavor. You can freeze raw bites before baking and cook from frozen by adding a few extra minutes to baking time.
