Description

Ingredients

  • 4 large carrots, peeled and grated
  • 1/4 cup fresh parsley, finely chopped (or cilantro as a twist)
  • 1/4 cup raisins
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the grated carrots, chopped parsley, and raisins.
  2. In a separate small bowl, whisk together cumin, cinnamon, lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the carrot mixture and toss until well combined.
  4. Chill the salad in the fridge for at least 30 minutes before serving for the best flavor.

Notes
