Ingredients

  • 1/2 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and either grease a muffin tin or line it with paper liners.
  2. In a mixing bowl, combine the mashed bananas with the melted butter until smooth.
  3. Add in the sugar, beaten egg, and vanilla extract; stir until everything is well blended.
  4. Mix in the baking soda and salt just until incorporated.
  5. Gently fold in the flour until the batter is combined. It’s okay if it’s a little lumpy.
  6. Spoon the batter into the muffin cups, filling each about 2/3 full.
  7. Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean and the tops are golden brown.
  8. Cool the muffins in the tin for a few minutes, then transfer to a wire rack to finish cooling.

Notes

Avoid overmixing the batter to keep your muffins light and fluffy. For extra flavor, mix in chocolate chips, chopped nuts, or a sprinkle of cinnamon. These muffins freeze well, making them a great grab-and-go option later on.
