- 3 ripe bananas, mashed (around 1 cup)
- 1/2 cup granulated sugar
- 1/3 cup unsalted butter, melted
- 1 large egg, beaten
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and either grease a muffin tin or line it with paper liners.
- In a mixing bowl, combine the mashed bananas with the melted butter until smooth.
- Add in the sugar, beaten egg, and vanilla extract; stir until everything is well blended.
- Mix in the baking soda and salt just until incorporated.
- Gently fold in the flour until the batter is combined. It’s okay if it’s a little lumpy.
- Spoon the batter into the muffin cups, filling each about 2/3 full.
- Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean and the tops are golden brown.
- Cool the muffins in the tin for a few minutes, then transfer to a wire rack to finish cooling.
Notes
