Instructions
- Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
- Whisk together almond flour, powdered sugar, and coffee powder in a large bowl.
- In another bowl, beat egg whites until foamy, then slowly add granulated sugar and whip until soft peaks form.
- Gently fold the dry mixture into the meringue until the batter flows like lava but holds its shape.
- Transfer batter to a piping bag with a round tip and pipe small circles onto prepared sheets. Let sit for 30 minutes until tops are dry.
- Bake for 15-20 minutes, then cool completely on baking sheets.
- Beat softened butter, caramel sauce, and vanilla extract until smooth. Pipe onto half the macarons and sandwich with remaining shells.
Notes
Aging the egg whites enhances the macaron texture. Avoid overmixing the batter to prevent flat macarons. For a fun twist, add food coloring or cocoa powder to the shells. Store in an airtight container in the fridge for up to a week.
