Description

This Missouri casserole is a comforting family favorite, loaded with ground beef, vegetables, rice, and a creamy mushroom sauce, all topped with melted cheddar cheese. It’s hearty, simple, and perfect for weeknight dinners or cozy weekends.


Ingredients

  • 1 pound ground beef (or ground turkey for a lighter option)
  • 1 cup diced onion
  • 2 cups frozen mixed vegetables (or your favorite mix)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 teaspoon garlic powder
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef and onion over medium heat until the meat is browned and the onion is tender, about 5-7 minutes.
  3. Drain excess fat, then stir in the mixed vegetables, cream of mushroom soup, garlic powder, and cooked rice. Season with salt and pepper.
  4. Transfer the mixture into a greased 9×13 inch baking dish and spread evenly.
  5. Sprinkle shredded cheddar cheese evenly over the top.
  6. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is melted and bubbly.
  7. Let the casserole rest for 5 minutes before serving.

Notes

For extra flavor, add a pinch of smoked paprika to the meat mixture. This casserole keeps well for up to 3 days in the fridge or can be frozen for a month. Try using Monterey Jack or Pepper Jack cheese for a twist.
