- 1 pound ground beef (or ground turkey for a lighter option)
- 1 cup diced onion
- 2 cups frozen mixed vegetables (or your favorite mix)
- 1 can (10.5 oz) cream of mushroom soup
- 1 teaspoon garlic powder
- 2 cups cooked rice (white or brown)
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef and onion over medium heat until the meat is browned and the onion is tender, about 5-7 minutes.
- Drain excess fat, then stir in the mixed vegetables, cream of mushroom soup, garlic powder, and cooked rice. Season with salt and pepper.
- Transfer the mixture into a greased 9×13 inch baking dish and spread evenly.
- Sprinkle shredded cheddar cheese evenly over the top.
- Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is melted and bubbly.
- Let the casserole rest for 5 minutes before serving.
Notes
For extra flavor, add a pinch of smoked paprika to the meat mixture. This casserole keeps well for up to 3 days in the fridge or can be frozen for a month. Try using Monterey Jack or Pepper Jack cheese for a twist.
