- 1 cup sour cream or Greek yogurt
- 1/2 cup heavy cream
- 2 cups shredded cheddar cheese (mix with pepper jack or mozzarella if desired)
- 1 cup cooked, crumbled bacon or turkey bacon
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Boil diced potatoes in salted water until tender, 15-20 minutes, then drain well.
- In a large bowl, mix potatoes with sour cream, heavy cream, half the cheese, and half the bacon. Season with salt and pepper. Stir until cheese begins to melt.
- Preheat oven to 350°F (175°C). Spread mixture into a greased baking dish, top with remaining cheese and bacon.
- Bake uncovered for 30 minutes, or until golden and bubbly.
- Garnish with chopped green onions before serving.
