  • 6 large russet potatoes, peeled and diced (swap with Yukon Gold for creamier texture)
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup heavy cream
  • 2 cups shredded cheddar cheese (mix with pepper jack or mozzarella if desired)
  • 1 cup cooked, crumbled bacon or turkey bacon
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Boil diced potatoes in salted water until tender, 15-20 minutes, then drain well.
  2. In a large bowl, mix potatoes with sour cream, heavy cream, half the cheese, and half the bacon. Season with salt and pepper. Stir until cheese begins to melt.
  3. Preheat oven to 350°F (175°C). Spread mixture into a greased baking dish, top with remaining cheese and bacon.
  4. Bake uncovered for 30 minutes, or until golden and bubbly.
  5. Garnish with chopped green onions before serving.
