Description

A luscious chocolate sponge cake swirled with a light, minty whipped cream filling. This roll is refreshing, rich, and a guaranteed crowd-pleaser for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh mint leaves, finely chopped
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • Chocolate shavings for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 15×10-inch jelly roll pan and line with parchment paper.
  2. In a medium bowl, combine flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a separate large bowl, beat eggs and sugar together for about 5 minutes until thick and pale.
  4. Fold in the dry mixture along with vegetable oil and vanilla extract, stirring gently to keep the mixture airy.
  5. Pour the batter into the prepared pan and spread it evenly. Bake for 12–15 minutes, until a toothpick comes out clean.
  6. Turn the cake onto a clean towel dusted with powdered sugar. Peel off the parchment and roll it up from the short side using the towel. Let it cool completely.
  7. In a chilled bowl, whip the cream, powdered sugar, and chopped mint leaves until soft peaks form.
  8. Unroll the cooled cake, spread the mint cream filling evenly, and re-roll it (without the towel). Chill for at least 30 minutes.
  9. Trim the ends for a clean look and top with chocolate shavings if desired. Slice and serve chilled.

Notes

Make this a day ahead and refrigerate it tightly wrapped. You can substitute peppermint extract for fresh mint if needed. Avoid overbaking the sponge to keep it flexible and moist.
