- 2 cups cooked chicken breast, shredded (rotisserie chicken works great)
- 1 cup diced bell peppers (use a variety for color)
- 1 small onion, finely chopped
- 1 teaspoon taco seasoning (store-bought or homemade)
- 12 small flour tortillas (or use corn for a gluten-free version)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Press each tortilla into a muffin tin to form small cups, shaping them snugly.
- In a skillet over medium heat, sauté the onion and bell peppers for about 5 minutes until softened. Stir in shredded chicken and taco seasoning, and heat until well combined.
- Fill each tortilla cup with the chicken mixture, being careful not to overfill. Sprinkle shredded cheese on top of each cup.
- Bake for 15 minutes or until the tortillas are crisp and the cheese is melted and bubbly.
- Remove from oven, cool slightly, and garnish with fresh cilantro before serving.
Notes
Swap chicken for turkey or shrimp if you’d like. You can freeze the unbaked cups (without cheese), then bake them later with cheese on top. For extra spice, add diced jalapeños to the filling.
