- 1 medium cauliflower, riced (or use pre-made cauliflower pizza crust)
- 2 cups cooked chicken, shredded (grilled chicken thighs also work well)
- 1 cup tzatziki sauce (store-bought or homemade with Greek yogurt)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1 cup spinach, chopped
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Fresh dill, for garnish
Instructions
- Preheat oven to 475°F (245°C). If using a homemade crust, prepare that first.
- In a mixing bowl, combine the shredded chicken with half the tzatziki sauce until well coated.
- Spread the remaining tzatziki over the prepared crust. Add the chicken mix, cherry tomatoes, red onion, and spinach.
- Top everything with shredded mozzarella for a golden, bubbly finish.
- Drizzle olive oil on top and bake for 12-15 minutes, or until cheese is melted and edges are golden.
- Cool slightly before topping with fresh dill. Slice and enjoy!
Notes
Using pre-cooked chicken and a store-bought crust can save prep time. Add red pepper flakes for a spicy twist. You can freeze the assembled pizza and bake later straight from the freezer.
