- 1 pound ground beef (or substitute with ground turkey)
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 2 bell peppers, any color, sliced
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add the sliced onion and cook until translucent, about 3-4 minutes.
- Turn the heat to high and add the ground beef. Break it apart and cook until browned, around 5-7 minutes. Season with oregano, paprika, salt, and black pepper.
- Add the bell peppers and zucchini to the skillet. Stir-fry for about 4-5 minutes until veggies are tender but still crisp.
- Stir in the minced garlic and cherry tomatoes. Cook for an additional 2-3 minutes until the tomatoes soften slightly.
- Take off heat and garnish with fresh parsley before serving.
Notes
Avoid overcrowding the pan to ensure proper searing. Try it with quinoa or a fresh Greek salad for a complete meal. Store leftovers in the fridge and reheat as needed. Great for meal prep too!
