- 4 chicken breasts – boneless and skinless
- 2 medium zucchinis – sliced into half-moons
- 1 red bell pepper – diced
- 1 yellow onion – sliced
- 2 cloves garlic – minced
- 1 cup cherry tomatoes – halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes – optional
- 1/4 cup feta cheese – crumbled (optional: use goat cheese)
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley – chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix zucchini, bell pepper, onion, garlic, cherry tomatoes, olive oil, oregano, basil, red pepper flakes, salt, and pepper until coated.
- Place chicken breasts in a baking dish and surround with the vegetable mixture, spreading evenly.
- Bake for 25-30 minutes or until chicken is fully cooked and vegetables are tender.
- Sprinkle crumbled feta cheese on top and return to oven for 5 more minutes to warm the cheese.
- Garnish with chopped parsley, slice the chicken, and serve warm.
Notes
Avoid overcrowding the pan to let everything roast properly. You can use chicken thighs or add vegetables like eggplant or squash. Ideal for meal prep, keeps well for up to 3 days in the fridge.
