  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 medium onion, sliced
  • 1 zucchini, sliced
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, combine olive oil, paprika, garlic powder, oregano, salt, and pepper. Coat the chicken thoroughly and marinate for at least 30 minutes (overnight if possible).
  2. Heat a large skillet over medium-high heat. Add chicken and sear for 5-6 minutes per side until fully cooked. Remove and set aside.
  3. In the same pan, sauté onions and bell pepper for 3-4 minutes until softened.
  4. Add zucchini and cherry tomatoes. Cook for another 3-4 minutes until vegetables are tender.
  5. Return chicken to the skillet. Squeeze lemon juice over everything, stir, and simmer for 2 more minutes to combine flavors.
  6. Top with fresh parsley before serving and enjoy warm.
