Ingredients

  • 4 fish fillets (cod, tilapia, or salmon), about 1.5 lbs
  • Juice of 1 lemon, plus extra slices for garnish
  • 2 tablespoons olive oil (or avocado oil)
  • 1 teaspoon dried oregano (or fresh)
  • 1 teaspoon garlic powder or 2 cloves minced garlic
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 red onion, sliced
  • Salt and pepper, to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper.
  3. Place fish fillets on a parchment-lined baking tray and drizzle the marinade over the top, coating evenly.
  4. Spread the tomatoes, bell pepper, and onion around the fish on the tray.
  5. Add lemon slices on top and bake for 15-20 minutes, or until the fish flakes easily.
  6. Garnish with parsley if desired, and serve warm.

Notes

Make sure fish is fully thawed if using frozen, to ensure even cooking. Keep a close eye to avoid overbaking.
