- 4 fish fillets (cod, tilapia, or salmon), about 1.5 lbs
- Juice of 1 lemon, plus extra slices for garnish
- 2 tablespoons olive oil (or avocado oil)
- 1 teaspoon dried oregano (or fresh)
- 1 teaspoon garlic powder or 2 cloves minced garlic
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 red onion, sliced
- Salt and pepper, to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper.
- Place fish fillets on a parchment-lined baking tray and drizzle the marinade over the top, coating evenly.
- Spread the tomatoes, bell pepper, and onion around the fish on the tray.
- Add lemon slices on top and bake for 15-20 minutes, or until the fish flakes easily.
- Garnish with parsley if desired, and serve warm.
