Ingredients

- 2 cups cooked pasta (rotini or fusilli recommended)
- 2 cups cooked chicken, shredded (grilled or rotisserie)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled (or goat cheese)
- 1/2 cup black olives, sliced (optional)
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
- In a large bowl, combine pasta, chicken, tomatoes, cucumber, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil, red wine vinegar, garlic powder, oregano, salt, and pepper.
- Pour dressing over salad and toss gently to coat.
- Cover and refrigerate for at least 30 minutes to let flavors meld.
- Before serving, toss again and adjust seasoning if needed. Serve chilled.
Notes
For extra freshness, add chopped parsley or basil. If prepping ahead, store salad and dressing separately and mix before serving. Leftover grilled chicken works perfectly for this recipe.
