Marinated Cauliflower Salad

  • Author: Navy Sinclair
  • Total Time: 2 hours 15 minutes
  • Yield: 6 to 8 servings 1x

Description

Crisp cauliflower florets meet a bold, tangy marinade in this vibrant and refreshing salad. Packed with fresh vegetables and a punchy dressing, it’s a fantastic side or light meal option that’s as healthy as it is flavorful.

Ingredients

Scale
  • 1 medium head of cauliflower, cut into small florets
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper until the dressing is well combined.
  2. Add cauliflower, cherry tomatoes, red onion, and parsley to the bowl and toss until evenly coated in the marinade.
  3. Cover and refrigerate for at least 2 hours to allow flavors to blend. For best results, marinate overnight.
  4. Before serving, toss the salad again and adjust seasoning if needed.

Notes

For best texture, use fresh cauliflower. You can experiment with herbs like dill or mint, and add a pinch of red pepper flakes for heat. Let the salad marinate long enough to develop flavor, and toss gently to maintain crunch.
