- 1 cup cream cheese, softened
- 1 cup confectioners’ sugar
- Zest of 2 lemons
- 2 tablespoons fresh lemon juice
- 1 ½ cups white chocolate chips
- 1 teaspoon vanilla extract
- Pinch of salt
- Coconut flakes or crushed nuts, optional for coating
Instructions
- Beat together the cream cheese, powdered sugar, lemon zest, lemon juice, vanilla, and salt in a bowl until smooth and creamy.
- Melt white chocolate in a microwave or double boiler, let it cool slightly, then stir into the cream cheese mix until fully blended.
- Cover and refrigerate for about an hour until the mixture is firm enough to handle.
- Shape chilled mixture into 1-inch balls using hands or a small scoop.
- Roll each truffle in coconut flakes or crushed nuts, if using, and set them on a parchment-lined tray. Chill for another 30 minutes.
- Serve cold and enjoy! They pair wonderfully with lemon sugar cookies for double citrus delight.
Notes
Add a drop or two of lemon extract for an even brighter citrus punch. If the dough is too sticky, lightly dust your hands with confectioners’ sugar. Truffles can be stored in an airtight container in the fridge for up to a week.
