- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp freshly grated lemon zest
- 1/4 cup granulated sugar, for rolling
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt; set aside.
- Cream butter and sugar in a large bowl until light and fluffy, about 3-4 minutes.
- Beat in egg, vanilla extract, and lemon zest until smooth.
- Gradually add dry ingredients to wet ingredients and mix until just combined.
- Form dough into tablespoon-sized balls and roll in the extra sugar. Place on baking sheets with space in between.
- Bake for 8 to 10 minutes until edges are lightly golden. Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Fresh lemon zest gives the best flavor. Avoid overbaking for that perfect soft and chewy texture.
