Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp freshly grated lemon zest
  • 1/4 cup granulated sugar, for rolling

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt; set aside.
  3. Cream butter and sugar in a large bowl until light and fluffy, about 3-4 minutes.
  4. Beat in egg, vanilla extract, and lemon zest until smooth.
  5. Gradually add dry ingredients to wet ingredients and mix until just combined.
  6. Form dough into tablespoon-sized balls and roll in the extra sugar. Place on baking sheets with space in between.
  7. Bake for 8 to 10 minutes until edges are lightly golden. Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Fresh lemon zest gives the best flavor. Avoid overbaking for that perfect soft and chewy texture.
