Description

A fresh and vibrant Mediterranean-inspired one-pot meal with juicy shrimp, tangy lemon, and creamy feta. It’s perfect for a quick dinner or a cozy get-together.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1 teaspoon garlic, minced
  • 1 teaspoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Warm olive oil in a large skillet over medium heat, then sauté minced garlic for about 30 seconds until fragrant.
  2. Add shrimp to the skillet and cook for 3-4 minutes until pink and fully cooked. Season with salt and pepper, then set aside.
  3. In the same pan, toast the orzo briefly, then add broth and lemon zest. Simmer covered for around 10 minutes until orzo is tender and most of the liquid is absorbed.
  4. Return the shrimp to the skillet and stir in lemon juice and crumbled feta. Let everything cook together for 2-3 minutes until heated through.
  5. Turn off heat and fold in chopped parsley. Serve hot, optionally topped with extra lemon slices and feta.

Notes

Avoid overcooking the shrimp to keep them tender. You can add red pepper flakes for heat or use low-fat feta for a lighter dish. Reheat leftovers on the stove with a splash of broth to revive texture.
