- 1 cup all-purpose flour
- 1/2 cup butter, softened (or plant-based alternative)
- 1/2 cup granulated sugar (or coconut sugar)
- 1/2 cup honey or maple syrup
- Zest of 1 large lemon
- 2 tablespoons lemon juice
- 2 tablespoons chia seeds
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- Cream the softened butter and sugar together until fluffy, about 2–3 minutes.
- Mix in honey (or maple syrup), lemon zest, lemon juice, and vanilla extract until well blended.
- In another bowl, whisk together flour, chia seeds, baking powder, and salt. Slowly combine this with the wet mixture, stirring until just mixed.
- Scoop dough onto a lined baking sheet using a tablespoon, spacing them apart slightly.
- Bake for 10–12 minutes, or until edges are lightly golden.
- Let cookies cool on baking sheet a few minutes before moving to a wire rack.
Notes
Add extra lemon zest for more zing. For variety, try folding in chopped nuts or white chocolate chips. These cookies freeze well in airtight containers.
