Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened (or plant-based alternative)
  • 1/2 cup granulated sugar (or coconut sugar)
  • 1/2 cup honey or maple syrup
  • Zest of 1 large lemon
  • 2 tablespoons lemon juice
  • 2 tablespoons chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream the softened butter and sugar together until fluffy, about 2–3 minutes.
  3. Mix in honey (or maple syrup), lemon zest, lemon juice, and vanilla extract until well blended.
  4. In another bowl, whisk together flour, chia seeds, baking powder, and salt. Slowly combine this with the wet mixture, stirring until just mixed.
  5. Scoop dough onto a lined baking sheet using a tablespoon, spacing them apart slightly.
  6. Bake for 10–12 minutes, or until edges are lightly golden.
  7. Let cookies cool on baking sheet a few minutes before moving to a wire rack.

Notes

Add extra lemon zest for more zing. For variety, try folding in chopped nuts or white chocolate chips. These cookies freeze well in airtight containers.
