- 1 cup fresh lavender flowers (culinary grade)
- 1/2 cup fresh mint leaves
- 4 cups water
- 1/2 cup honey (or agave syrup)
- Juice of 2 lemons
- Ice cubes
- Sparkling water (optional, for topping)
Instructions
- Bring 4 cups of water to a boil in a large pot. Remove from heat and add the lavender flowers. Let steep for 10 minutes.
- Add the mint leaves to the pot and steep for an additional 5 minutes.
- Strain the mixture into a pitcher, discarding the solids. Stir in the honey while warm until fully dissolved.
- Let the liquid cool, then mix in the lemon juice.
- Serve over ice, top with sparkling water if desired, and garnish with fresh lavender and mint leaves.
Notes
For a stronger lavender flavor, let it steep longer, but not too long to avoid bitterness. You can prepare this ahead and store in the fridge for a few days. For an adult version, add a splash of gin or vodka.
