Description

Bring a touch of French elegance into your home with these light and delicate lavender macarons. They’re floral, sweet, and perfect for any special moment or simple indulgence.


Ingredients

  • 1 cup almond flour (finely ground for best texture)
  • 1 3/4 cups powdered sugar
  • 3 large egg whites (aged 24 hours)
  • 1/4 cup granulated sugar
  • 1 teaspoon culinary lavender (edible dried lavender)
  • 1/2 teaspoon vanilla extract
  • Buttercream or your preferred filling (lavender-flavored works great)

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment. Use a macaron template if available.
  2. Sift together almond flour and powdered sugar in a large bowl to remove lumps and ensure smooth shells.
  3. In a clean mixing bowl, beat egg whites until foamy. Gradually add granulated sugar while beating until stiff peaks form and the mix looks glossy.
  4. Gently fold the almond flour mixture and lavender into the meringue using a spatula. Mix until it flows like lava.
  5. Transfer batter to a piping bag with a round tip. Pipe small circles onto prepared sheets, leaving space between them.
  6. Let the piped macarons rest for 30 minutes at room temperature to form a skin.
  7. Bake one tray at a time for 15–20 minutes until set and lightly firm on top.
  8. Cool completely before removing from parchment. Fill with buttercream or another filling and sandwich together.

Notes

Be gentle with the folding process to keep the batter airy. For extra flair, top with dried lavender or edible flowers. Lavender dulce de leche is a delightful filling option.
