- 1 pound ground beef
- 1 cup panko breadcrumbs
- 1/4 cup chopped green onions (or red onions)
- 1 large egg
- 1 tablespoon minced garlic
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 teaspoons sesame oil
- 1 tablespoon gochujang (Korean chili paste)
- 8 small flour tortillas
- 1 cup shredded cabbage
- 1 cup shredded carrots
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Preheat oven to 400°F (200°C). In a mixing bowl, combine ground beef, breadcrumbs, onions, egg, garlic, soy sauce, brown sugar, sesame oil, and gochujang. Mix thoroughly.
- Roll the mixture into 1-inch meatballs and place them on a lined baking sheet. Bake for 20 minutes or until browned and fully cooked.
- While the meatballs cook, warm the tortillas in a skillet or wrap them in foil and heat them in the oven during the last 5 minutes of baking.
- Assemble the tacos by placing a few meatballs in each tortilla. Top with shredded cabbage, carrots, and fresh cilantro.
- Serve with lime wedges on the side for a zesty finish.
Notes
You can prep the meatballs ahead of time and store them in the fridge until ready to bake. Add sliced radishes, avocado, or a drizzle of spicy mayo for a tasty twist. Always use fresh cilantro for the best flavor.
