- Zest from 1 key lime
- Buttercream or cream cheese filling of your choice
Instructions
- Sift almond flour and powdered sugar together into a bowl to create a fine, lump-free mixture.
- In a separate bowl, beat egg whites with cream of tartar until foamy, then gradually add granulated sugar. Continue beating until stiff peaks form (about 5-7 minutes).
- Carefully fold in vanilla extract, key lime juice, and lime zest to keep the meringue light and airy.
- Slowly fold the sifted dry ingredients into the egg white mixture until it flows smoothly like lava.
- Transfer the batter into a piping bag with a round tip. Pipe small circles onto a parchment-lined baking sheet, spacing them apart.
- Allow macarons to rest at room temperature for 30-60 minutes, until they form a dry skin.
- Preheat oven to 300°F (150°C) and bake for 15-20 minutes. They should not brown and should lift easily from the paper.
- Cool completely before removing from the tray.
