Ingredients

  • 1 3/4 cups powdered sugar
  • 3 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 1 tablespoon fresh key lime juice
  • Zest from 1 key lime
  • Buttercream or cream cheese filling of your choice

Instructions

  1. Sift almond flour and powdered sugar together into a bowl to create a fine, lump-free mixture.
  2. In a separate bowl, beat egg whites with cream of tartar until foamy, then gradually add granulated sugar. Continue beating until stiff peaks form (about 5-7 minutes).
  3. Carefully fold in vanilla extract, key lime juice, and lime zest to keep the meringue light and airy.
  4. Slowly fold the sifted dry ingredients into the egg white mixture until it flows smoothly like lava.
  5. Transfer the batter into a piping bag with a round tip. Pipe small circles onto a parchment-lined baking sheet, spacing them apart.
  6. Allow macarons to rest at room temperature for 30-60 minutes, until they form a dry skin.
  7. Preheat oven to 300°F (150°C) and bake for 15-20 minutes. They should not brown and should lift easily from the paper.
  8. Cool completely before removing from the tray.
  9. Pipe or spread your chosen filling onto one macaron shell and sandwich with another. Enjoy your citrusy delights!
