- 1 pound ground beef or lamb
- 1/2 cup grated Parmesan cheese (or feta)
- 1/4 cup finely chopped parsley
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg
- 1/4 cup almond flour
Instructions
- Preheat oven to 400°F (200°C) to get a nice even cook on your meatballs.
- In a large bowl, combine ground meat, cheese, parsley, garlic, oregano, salt, pepper, egg, and almond flour. Mix by hand until just combined.
- Roll the mixture into 1-inch balls. You should get about 18–20. Line a baking sheet with parchment paper and place the meatballs evenly spaced.
- Bake for 20–25 minutes until browned and cooked through. Check one by slicing it in half—there should be no pink inside.
Notes
Avoid overmixing the ingredients to keep the meatballs tender. You can freeze extra uncooked meatballs for another day.
