Description
These classic peanut butter cookies are a cozy, nostalgic treat inspired by President Jimmy Carter’s love of all things peanut. Soft in the center, lightly crisp on the edges, and full of comforting flavor, they’re perfect for any occasion.
Ingredients
Scale
- 1 cup creamy peanut butter (or crunchy, for added texture)
- 1 cup granulated sugar (or use brown sugar for a richer flavor)
- 1 large egg (can be replaced with flaxseed meal and water for a vegan option)
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) to ensure even baking and a golden finish.
- In a mixing bowl, blend together the peanut butter and sugar until smooth.
- Add in the egg, vanilla extract, baking soda, and salt. Stir until the dough is thick and fully combined.
- Scoop tablespoon-sized portions of dough onto a lined baking sheet, leaving space between each one.
- Flatten each ball slightly using a fork to make a crisscross pattern.
- Bake for 8 to 10 minutes, until the edges are set and centers are soft. Cool on the tray for a few minutes before transferring to a wire rack.
Notes
You can chill the dough for 15 minutes if it’s too sticky to handle. For a fun twist, mix in chocolate chips or chopped nuts. Store in an airtight container for up to a week, or freeze for up to 3 months.
