- 2 large chicken breasts, thinly sliced and pounded flat
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- Salt and pepper, to taste
- Vegetable oil, for frying
- 3 cups cooked Japanese short-grain rice
- 1/4 cup soy sauce
- 2 tablespoons mirin
- 1 tablespoon sugar
- 2 green onions, sliced
- Pickled ginger, optional
Instructions
- Season chicken breasts with salt and pepper. Dredge in flour, dip in beaten eggs, and coat with panko breadcrumbs.
- Heat about 1/2 inch of vegetable oil in a skillet over medium-high heat. Fry chicken for 3-4 minutes per side until golden and cooked through. Drain on paper towels.
- In a small saucepan over low heat, combine soy sauce, mirin, and sugar. Stir until sugar is dissolved.
- To assemble, place rice in each bowl, top with sliced fried chicken, drizzle sauce over the top, and garnish with green onions and pickled ginger if using.
Notes
Let the chicken rest before slicing to keep it juicy. You can also prepare the sauce ahead of time and store it in the fridge for convenience.
