  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup ricotta cheese or pastry cream (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. In a medium saucepan over medium heat, combine water and butter. Stir until the butter melts and the mixture begins to boil gently.
  2. Add flour and salt all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth dough ball and pulls away from the pan. This takes about 1-2 minutes.
  3. Take the pan off the heat and let the dough cool slightly. Add eggs one at a time, beating well after each addition, until the dough becomes smooth and shiny.
  4. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Pipe small rounds of dough using a piping bag, leaving enough space for them to expand.
  5. Bake for 20-25 minutes or until golden and puffed. Do not open the oven during baking to prevent collapse.
  6. Let cool slightly. Fill each Zeppole with ricotta or pastry cream. Finish with a dusting of powdered sugar before serving.

Notes

To enhance your filling, try mixing in some vanilla extract or a bit of lemon zest. You can also freeze any leftover dough for up to one month, just thaw and bake as needed. Don’t hesitate to try different fillings like chocolate mousse or fruit jam!
