Ingredients

  • 1.5 pounds ground beef (or ground turkey)
  • 1 cup breadcrumbs (whole wheat optional)
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.
  2. In a large bowl, mix together ground beef, breadcrumbs, Parmesan, eggs, milk, onion, garlic, herbs, and seasonings.
  3. Shape the mixture into a loaf and place in the prepared pan.
  4. Spread a layer of ketchup on top for glaze.
  5. Bake for 1 hour or until internal temperature reaches 160°F (70°C).
  6. Let rest for 10 minutes before slicing and serving.

Notes

Avoid overmixing the meat to keep the loaf tender. Let it rest after baking to lock in moisture. Add chopped bell peppers or fresh herbs for extra flavor. Leftovers freeze well.
