This Easy Italian Chicken Delight is a comforting classic that’s perfect for any dinner table. Tender chicken breasts are smothered in marinara sauce, melty mozzarella, and sautéed vegetables, then baked to perfection. It’s the kind of meal that turns a regular night into something special.

- 4 boneless, skinless chicken breasts (or thighs for richer flavor)
- 2 cups marinara sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese (or provolone/fontina)
- 1 cup sliced bell peppers (mixed colors)
- 1 medium onion, sliced
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning (or mix of basil and oregano)
- Salt and pepper, to taste
- Fresh basil, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium heat. Sauté sliced onions and bell peppers until just tender, about 5 minutes.
- Stir in minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
- Move vegetables to the side of the skillet and place chicken breasts in the center. Sear 3–4 minutes per side until golden.
- Pour marinara sauce over chicken and spoon veggies on top. Sprinkle mozzarella evenly over everything.
- Transfer skillet to oven and bake for 25–30 minutes, or until chicken is fully cooked and cheese is bubbling.
- Let rest briefly out of the oven. Garnish with fresh basil before serving.
Notes
To deepen flavor, marinate chicken in marinara sauce a few hours ahead. Add spinach or kale during the final minutes of cooking for extra nutrition. Store leftovers in the fridge up to 3 days in an airtight container.
