- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 tablespoon pure vanilla extract
- 4 large egg yolks
Instructions
- In a medium saucepan, whisk together milk, cream, sugar, cornstarch, and salt over medium heat until it begins to steam; don’t let it boil.
- In a separate bowl, whisk the egg yolks until fully combined.
- Slowly pour half of the hot milk mixture into the yolks, whisking constantly to temper the eggs.
- Return the egg mixture to the saucepan and continue stirring over medium heat until it thickens and coats the back of a spoon, about 5 minutes.
- Remove from heat and stir in the vanilla extract. Let it cool slightly before transferring to serving dishes.
- Cover with plastic wrap, pressing it directly on the surface, and refrigerate for at least 2 hours before serving.
Notes
Avoid boiling the mixture to keep the custard smooth. Tempering the eggs is crucial to prevent scrambling. Chill thoroughly for best texture.
