Ingredients

- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 2 large egg whites
- 2 cups chopped nuts (almonds, peanuts, or your favorite)
- 1 teaspoon vanilla extract
- 1/4 cup honey
- 1/4 teaspoon salt
Instructions
- Line an 8×8-inch baking dish with parchment paper, allowing some to hang over the sides for easy removal later.
- In a medium saucepan, combine sugar, corn syrup, and water. Heat over medium until the sugar dissolves, then increase heat to boil. Cook until it hits 250°F.
- While the syrup heats, beat egg whites until stiff peaks form using a hand or stand mixer.
- Carefully pour the hot syrup into the egg whites while mixing on low speed, then increase to medium until mixture is stiff and glossy.
- Fold in the chopped nuts, honey, vanilla, and salt until well mixed.
- Transfer the nougat mixture into the lined baking dish and spread it evenly. Let it rest at room temperature for several hours or until firm.
- Once set, lift the nougat out using the parchment and cut into bars. Enjoy!
Notes
Use a candy thermometer to avoid over- or undercooking the syrup. Store in an airtight container for up to 2 weeks, or freeze for up to 3 months. For a flavor twist, add a touch of almond extract.
