Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 5 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Pita bread or wraps, for serving
  • Optional toppings: sliced cucumbers, tomatoes, red onion, tahini sauce

Instructions

  1. In a mixing bowl, whisk together olive oil, garlic, cumin, coriander, paprika, turmeric, cayenne pepper, lemon juice, salt, and pepper.
  2. Place chicken thighs in the bowl and coat evenly with marinade. Cover and refrigerate for at least 1 hour or overnight.
  3. Heat a grill or skillet over medium-high heat. Cook marinated chicken for 6 to 7 minutes on each side, until fully cooked and slightly charred.
  4. Transfer chicken to a cutting board, let rest for a few minutes, then slice into strips.
  5. Serve inside warm pita or wraps with your favorite toppings such as cucumber, tomato, onion, and tahini.

Notes

Marinating overnight enhances flavor. For a smoky touch, try adding smoked paprika. Leftovers work great in salads or grain bowls the next day.
