- 2 lbs boneless, skinless chicken thighs
- 5 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons paprika
- 1 teaspoon turmeric
- 1 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- Juice of 1 lemon
- Pita bread or wraps, for serving
- Optional toppings: sliced cucumbers, tomatoes, red onion, tahini sauce
Instructions
- In a mixing bowl, whisk together olive oil, garlic, cumin, coriander, paprika, turmeric, cayenne pepper, lemon juice, salt, and pepper.
- Place chicken thighs in the bowl and coat evenly with marinade. Cover and refrigerate for at least 1 hour or overnight.
- Heat a grill or skillet over medium-high heat. Cook marinated chicken for 6 to 7 minutes on each side, until fully cooked and slightly charred.
- Transfer chicken to a cutting board, let rest for a few minutes, then slice into strips.
- Serve inside warm pita or wraps with your favorite toppings such as cucumber, tomato, onion, and tahini.
