Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced (Yukon gold or red)
  • 1 cup celery, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup frozen peas
  • 1 tablespoon olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Optional: 1 tablespoon lemon juice

Instructions

  1. Warm the olive oil in a large pot over medium heat. Add chopped onions and garlic; cook for about 5 minutes until softened.
  2. Stir in the chicken pieces and sear them until slightly browned, about 5–7 minutes.
  3. Add carrots, celery, and potatoes. Mix well, then pour in the chicken broth and bring to a gentle simmer.
  4. Season with thyme, rosemary, salt, and pepper. Simmer uncovered for 30 minutes, stirring now and then.
  5. Stir in the peas and optional lemon juice. Let it simmer 5 more minutes, then serve warm.

Notes

For richer flavor, brown the chicken in a cast iron skillet first. This stew is even tastier the next day and freezes well for up to three months.
