- 2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 4 cups chicken broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced (Yukon gold or red)
- 1 cup celery, chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 cup frozen peas
- 1 tablespoon olive oil
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Optional: 1 tablespoon lemon juice
Instructions
- Warm the olive oil in a large pot over medium heat. Add chopped onions and garlic; cook for about 5 minutes until softened.
- Stir in the chicken pieces and sear them until slightly browned, about 5–7 minutes.
- Add carrots, celery, and potatoes. Mix well, then pour in the chicken broth and bring to a gentle simmer.
- Season with thyme, rosemary, salt, and pepper. Simmer uncovered for 30 minutes, stirring now and then.
- Stir in the peas and optional lemon juice. Let it simmer 5 more minutes, then serve warm.
Notes
For richer flavor, brown the chicken in a cast iron skillet first. This stew is even tastier the next day and freezes well for up to three months.
