  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat oven to 375°F (190°C) and grease or line a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, salt, and pepper.
  3. Fold in diced ham and shredded cheese until evenly distributed.
  4. In another bowl, whisk milk, vegetable oil, and eggs until fully combined.
  5. Pour wet ingredients into dry mixture and stir just until combined. Avoid overmixing.
  6. Spoon batter into muffin cups, filling each about 2/3 full.
  7. Bake for 20–25 minutes, or until golden brown and a toothpick comes out clean.
