- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes (with green chilies if desired)
- 2 tablespoons taco seasoning (store-bought or homemade)
- Salt and pepper, to taste
- Chopped cilantro, for garnish
- Shredded cheese (optional)
- Avocado or sour cream, for serving
Instructions
- Warm the olive oil in a large skillet over medium heat. Add diced onion and bell pepper, and sauté for about 5 minutes until soft.
- Add minced garlic and ground turkey, using a spoon to break up the meat. Cook until the turkey is no longer pink, about 6-7 minutes.
- Mix in diced tomatoes, black beans, and taco seasoning. Stir well and let simmer for 5 minutes to let the flavors come together.
- Taste and adjust seasoning with salt and pepper if needed. Add spice with hot sauce or extra taco seasoning if you like it hotter. Finish with chopped cilantro.
- Serve hot with optional toppings like shredded cheese, avocado chunks, or a spoonful of sour cream. Enjoy!
