  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes (with green chilies if desired)
  • 2 tablespoons taco seasoning (store-bought or homemade)
  • Salt and pepper, to taste
  • Chopped cilantro, for garnish
  • Shredded cheese (optional)
  • Avocado or sour cream, for serving

Instructions

  1. Warm the olive oil in a large skillet over medium heat. Add diced onion and bell pepper, and sauté for about 5 minutes until soft.
  2. Add minced garlic and ground turkey, using a spoon to break up the meat. Cook until the turkey is no longer pink, about 6-7 minutes.
  3. Mix in diced tomatoes, black beans, and taco seasoning. Stir well and let simmer for 5 minutes to let the flavors come together.
  4. Taste and adjust seasoning with salt and pepper if needed. Add spice with hot sauce or extra taco seasoning if you like it hotter. Finish with chopped cilantro.
  5. Serve hot with optional toppings like shredded cheese, avocado chunks, or a spoonful of sour cream. Enjoy!
